In honor of it being 95 degrees outside today, I decided to make potato soup.
Wait, that’s not right.
I found this really great potato soup recipe and decided to make it in spite of it still being 95 degrees outside.
Here’s the recipe and it’s easier than it even sounds. I made it exactly as the recipe calls, and even though I don’t like cream cheese – it was perfect in this soup. I can imagine making this soup the day after Christmas, when you have left over ham and you’ve eaten all you can handle on Christmas Day. It would be a perfect use of leftover ham, and also perfect for relaxing at home after a crazy Christmas season =)
